Lemon Ice Box Pie


An old-timey favorite, simple to make and simply delicious. This is a great summer dessert to share at BBQs and gatherings.    

Fluffy and creamy smooth with a refreshing hint of lemon and the tropics, this will become one of your summer time favorites.

Lemon Ice Box Pie is considered by many to be a southern dish, but I can remember my mother making the most wonderful Lemon pies when I was little in central Ohio.  

Ice boxes date back to the days of ice harvesting which ran from the mid-19th century to the 1930s, or until refrigerators were introduced into the home. The Ice box had hollow walls and were packed with blocks of ice to keep food cold. It is most likely this pie recipe was created around that time.


Gather The Ingredients:

1 package (8 ounces) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
3/4 cup lemonade from a can of thawed concentrate
1 carton (8 ounces) Cool Whip whipped topping, thawed
Yellow food coloring, optional
1 graham cracker crust (9 inches) homemade or purchased
Fresh lemons for garnish or zest, optional

Now Whip It Up


In a large bowl, beat cream cheese and milk until smooth.  Beat in lemonade concentrate. Add a little lemon zest if desired. 

Fold in whipped topping. 
Divide mixture in half into two separate bowls.  
You can skip this step if you wish and just spread the entire mixture into the crust.  I just like the two tones it creates in the pie.
Add a few drops of yellow food coloring to one half of the mixture.
Pour yellow mixture into the crust. Smooth until even. 
Add second half of mixture, smooth until even. 

Cover and refrigerate until set.



If desired, add a thin slice of lemon, cut and twisted or a few pieces of lemon zest onto each slice of pie as it is served.  
This disappeared in a matter of like 24 hours,

  2. There is definitely a lot of recipes for cheesecake type desserts out there, but this is the first lemon one I've seen. I really like all of the steps you've given and makes it look easy to make even for a non-baker like me!
