Coconut Macaroons

Here's another of our favorite Christmas cookies: Coconut Macaroons.

These are easy cookies to make, have just a few ingredients, but pack a big punch of flavor.

Adding a little almond extract gives the cookie just enough extra flavor, but not enough to over shadow the coconut.  
If almond is the flavor you wish to dominate add a little more extract.

These store well in a sealed air tight container.
These can be made Gluten Free, just use GF flour.


COCONUT MACAROONS

Ingredients:
I use Bakers sweetened coconut
  • 1 -14 oz package (5 1/3 cups) Flake coconut
  • 2/3 Cup sugar
  • 6 Tablespoons flour
  • 1/8 teaspoon salt
  • 4 egg whites
  • 1/8   to 1/4 teaspoon almond extract


Making the Cookies:

Heat oven to 325 degrees.  Mix coconut, sugar, flour and salt in mixing bowl. 
Stir in egg whites and almond extract until well blended. 

Mix together coconut, sugar, flour and salt

Drop a teaspoonful of cookie dough onto lightly greased or parchment paper covered baking sheets.
Bake for 20 to 25 minutes or until edges of cookies are golden brown. 
Remove from oven immediately and allow to cool completely.

Bake 20 to 25 minutes or until golden brown around the edges 

Makes about 36 macaroons.
