Jamaican Jerk Pork Tenderloin


I asked for this wonderful recipe from our friends, David and Beth in 2010 after attending a dinner party they hosted. We just love this recipe and it's a hit each time I serve it. 

Jamaican Pork Tenderloin was the main course I served at our Women's Only Dinner Party and it's also great for a romantic dinner or holidays like Valentine's Day or other occasions.
The recipe was created by Lori Welander and won the first place prize in McCormick's 2002 Cook-Off Contest.



Blueberry Lemon Jam

Blueberry season is fast approaching! 
The blueberry-picking season depends on the geographical location of your blueberries, but most blueberries are ripe in June and July.

I purchased my blueberries while on one of our trips to Michigan.  Once home I froze them until I could make blueberry jam and syrup, add to muffins or mix up a batch of blueberry pancakes.  

Besides Michigan being a beautiful state, it is the leader in highbush blueberry production.  Michigan farms produce approximately 220,000 tons (490,000,000 lbs) of blueberries, accounting for 32% of all the blueberries eaten in the United States.





Strawberry Jam (No Canning Required)

Strawberry Freezer Jam in 30 Minutes

Strawberries are ripe here in central Ohio around the first week in June. 
I started making Strawberry Freezer Jam in the early 1990s and now my kids will not eat (or even like) commercially produced jam. Every year we go to a “Pick Your Own” farm to pick the strawberries fresh. 

When choosing strawberries, homegrown or farm fresh strawberries produce the best jam.  Store purchased lack the intense sweet strawberry flavor. 

I have also made cooked strawberry jam and it’s great for shelf life but there is just no comparison with Strawberry Freezer Jam for flavor. 



Strawberry Schnapps

Its strawberry season in many regions and sometimes we pick more than we know what to do with.  And we’re not the only ones.  On a couple blogs and pages I follow there is always a question posted as to what to do with all these strawberries!  The usual answers are posted; make jam, jelly, flash freeze for desserts, and use in smoothies.  I added why not make Schnapps?  I got many replies asking me to please post the recipe, so here it is.
This schnapps has a delicate, aromatic taste and a beautiful red color.
For the best results and flavor, use fresh fully ripe strawberries. You can use store purchased strawberries, but farm fresh have a richer sweeter flavor and aroma and just produced a better end product.

Mint Jelly


Spring was late arriving here in Ohio but how wonderful it is to finally feel the warmth of the sun.
I am busy preparing my garden for planting and noticed the herbs and mints are coming up.
A few years ago I had mint jelly on Lamb Chops for the first time and loved it.  But trying to find mint jelly in most grocery stores is nearly impossible.

I finally gave up the search and have since been making mint jelly at home, which is easy and just as delicious!

Mint Jelly is mildly sweet and just a little tart, with a wonderful fresh mint flavor.
And guess what?   Mint jelly is not really green. It’s actually a golden color in its natural state. Adding a couple drops of natural food coloring will give it the traditional green color, or just leave it golden.

Quick Raspberry Jam


This recipe locks in the summer-fresh-just-picked-from-the-bush raspberry flavor.  And what’s even better, there’s no canning process involved.

I have been using a similar recipe for freezer jam for years, but with strawberries.  This Raspberry Freezer Jam is just as good!
Remember, when choosing berries, fresh from the farm fruit is always best and has the most intense flavor, which in turn produces the best results.

If you are purchasing produce from a grocery store, try to stick with the organic.
If you are concerned about the sugar, Sure-Jell has low sugar and no sugar recipes on their website. But please research the dangers of artificial sweeteners before using!


I use homemade Raspberry Jam as an ingredient in my sauce for my Jamaican Pork Tenderloin, and on Raspberry Sponge Cake.

Choosing a Farm Market and Making Jam

I have been going to the same farm for strawberries for years, but the last couple of years, the farm was unkempt, strawberries were bad, little or non-existent, and the people running the farm store were not very helpful and a little unfriendly.

I decided this was the year to find a new farm! so started to look for a "Pick Your Own" type farm.

I started canning (or preserving food) when my son Daniel was little,in the early 1990's.  The photo above shows him at about 2 1/2 years old. And yea, I had a "cow" decorated kitchen, yikes!
