Honey - Cilantro Chicken Kabobs (Skewers)

This is one of my most requested recipes!

And not only is it flavorful and delicious, it's easy to make and very versatile. You can add any additional veggies or fruits you like, but the kabobs are perfect just following the recipe.

I sometimes add quartered peaches and red bell pepper or whatever is in season from my garden.


I usually serve a peach or strawberry salsa with this dish, along with roasted red skin potatoes or spring greens salad, yum.

Honey - Cilantro Chicken Kabobs (Skewers)

Ingredients:

2 – 3 Tablespoons diced cilantro
2 – 3 Tablespoons raw honey
1 Tablespoon sea salt
2 - 3 Tablespoons olive oil
1 Tablespoon lime juice
3 garlic cloves, minced
Red pepper flakes, to taste
1 Can Dole pineapple chunks, drained
1 large red onion, quartered
3 skinless, boneless chicken breasts 

Cilantro sprigs for garnish
1 lime for garnish


Cut chicken into chunks

How to Make the Skewers:

Cut lime into quarters or slices for garnish. Set aside. 
Cut chicken into chunks or cubes and then cut onion into quarters.

Mix the marinade in a large bowl

In a medium bowl, combine diced cilantro, honey, sea salt, olive
oil, lime juice, minced garlic and red pepper flakes. 
Mix well.

Add chicken to marinade and stir to coat

Add chicken breasts chunks to marinade, and turn to coat
thoroughly. Cover and allow to marinate 1 to 2 hours,
stirring every 10 to 15 minutes.

Put chicken on skewers, alternating with the pineapple and onion or other fruits and vegetables

Place chicken on skewers, alternating every few pieces with
pineapple chunks and pieces of red onion.
Additional fruits or vegetables can be added like quartered peaches, cherry tomatoes, button mushrooms or bell peppers. 
I place the kabobs on trays as I assemble them for easy transport to the grill and to minimize mess.

Grill chicken skewers on medium heat for 6 to 10 minutes per side,
or until chicken is done and veggies are tender. It doesn't take long,
so do not over cook the chicken.

This time served with strawberry salsa and Black Bean, Tomato and Corn Salsa

A little charring will occur because of the honey.
To serve push chicken, fruit and veggies off the skewer onto a plate
then garnish with cilantro springs and lime pieces.

Fresh Peach or Strawberry Salsa or Black Bean, Tomato and Corn Salsa go great as a side dish.

These kabobs can also be broiled in the oven.

We just dug up our red and Yukon gold potatoes from the garden and finishing up the last of canning garden vegetables.
